The role of Sodium Hexametaphosphate in food

Sodium Hexametaphosphate is widely used in food additives, and its specific functions are as follows:

(2) Used in soybean paste and soy sauce to prevent discoloration, increase viscosity, shorten the fermentation period, and adjust the taste;


(3) Used in fruit drinks and refreshing drinks, it can increase the juice yield, increase the viscosity, and inhibit the decomposition of vitamin C;


(4) Used in ice cream, it can increase the expansion capacity, increase the volume, enhance the emulsification to prevent the destruction of the paste, and improve the taste and color; used in dairy products and beverages to prevent gel precipitation;


(5) Added to beer to clarify the liquor and prevent turbidity; used in beans, canned fruits and vegetables, can stabilize natural pigments and protect the color of food. In addition, the aqueous solution of sodium hexametaphosphate is sprayed on the cured meat to improve the anti-corrosion performance.
